there are lots of books not taken in the bible, many due to lack of complete information, some due to religious problem catholic and Protestant perspective, can you help information on that.

I might have seen a challenge to the bible where someone might have said “my favorite parts of the bible are when Jesus is ALONE talking to God (Himself) AND SOMEONE WHO WASN’T THERE IS WRITING ABOUT IT.” So, how would a Christian answer that? How did the writers of the bible know what Jesus was praying when He was by himself?
